I remember eating this slice when I was growing up. Mum used to make it (without the walnuts and tea biscuits) and it would be hot out of the oven just as us 3 hungry kids arrived home from school. 1 piece was never enough and I’m really surprised we had room for dinner after this afternoon snack. My friends were always keen to visit if there was a chance of some freshly baked slice. Below is my take on my mum’s recipe.
Chocolate Coconut Slice with Walnuts
125g butter, melted
½ cup brown sugar, firmly packed
1 cut coconut
½ cup plain flour
½ cup self raising flour
1 ½ tablespoon cocoa (or hot chocolate powder)
½ cup chopped walnuts
½ cup chopped tea biscuits
1 cup icing sugar
1 tablespoon cocoa
1 teaspoon butter
1 tablespoon milk / hot water
Top with ¼ cup coconut
Preheat oven to 180C, grease a square tin or rectangle tin (or tin with baking paper).
Mix all ingredients together with a wooden spoon.
Spread mixture evenly over base of tin.
Bake for 20 minutes or firm to touch (it will be a little squidgy in the middle).
Mix all icing ingredients together and ice immediately while slice is still warm. Sprinkle with coconut. Allow to cool. Cut into squares.
Tip– best eaten warm. Yummmmm.
If you don’t have walnuts, use Brazil nuts or Macadamia nuts as these would be equally as nice.
