1 onion, peeled and chopped
1 apple, peeled and chopped
250g dates, chopped
1 tsp curry powder
1/2 tsp dried mustard
1 1/2 cups white vinegar
1 cup brown sugar
Combine onions, apples, dates, curry powder, mustard and vinegar in a large pan. Bring to the boil.
Simmer uncovered for 30 minutes. Stir occasionally to prevent sticking.
Add sugar and stir over low heat until sugar dissolves.
Bring to the boil and then simmer for 10 minutes
Pour into sterilised jars. Seal. Keeps for 3 months.
Tip: enjoy on a sandwich, or with cheese
