The below recipe makes about 40 -45 biscuits. I usually halve the measurements. Half batch makes about 20 biscuits.
Date and Cornflake Biscuits
5 cups cornflakes
1 cup coconut
1⁄2 cup brown sugar
2 cups chopped dates
1 cup S R flour
6 oz. (185 g) butter, melted
Preheat oven to 180C
Combine coconut, sugar, dates and flour in bowl.
Add melted butter and beaten eggs, mix well. Add cornflakes and stir until combined.
Take heaped teaspoons of mixture and shape into rounds onto baking tray.
Bake in moderate oven for 10 minutes.
