Goulash with Potatoes

Having spent some time living in Prague, there is nothing better than sitting down to a delicious Gulaš. Below is my recipe – tried and tested – “English” take on the traditional Czech meal

400g beef chunks
2 Tbsp flour
1 onion, sliced
2 cloves garlic, crushed
1 red pepper, sliced
1 green/yellow/orange pepper, sliced
250ml beef stock
100ml white wine
3 Tbsp paprika
3 Tbsp tomato puree
3 tomatoes, diced
optional chilli pepper

Sour cream and fresh parsley to garnish
Serve with potatoes (mashed, boiled, dumplings)

Spinkle flour onto beef chunks
heat oil and brown meet in heavy base pan with lid (Le Creuset is perfect for this). Remove beef from pan, and sit to the side

In the pan now add the onions, peppers and garlic. Cook on med heat for 10 minutes
Add tomato puree, paprika and beef to pan. Stir well to coat beef
Add tomatoes, wine and stock. Bring up to a simmer and stir. Season
Lower heat, cover with lid and cook for 1-2 hours on low heat. Stir occasionally
Remove lid and allow sauce to thicken slightly before serving.

optional – stir sour cream through sauce before serving, or add as garnish with parsley

Serve with boiled potatoes, mashed potatoes, bread dumplings or potato dumplings

Enjoy with a pilsner. Dobre Chut! Na zdravi!
