There is nothing impossible about this pie…. except it is impossible to mess it up. A versatile recipe and perfect for using up leftover vegetables.
1/3 cup flour
1½ cups milk
3 eggs lightly beaten
2 bacon rashes grilled and diced *
3 spring onions chopped *
1 cup grated cheese *
130g can corn kernels drained *
salt & pepper
Preheat oven to 180C
Grease a shallow oven dish (approx 22cm x 22cm)
Mix flour, milk and eggs until smooth. Stir in remaining ingredients and then pour into the dish
bake in oven for 45 mins or until lightly browned and set
serving suggestion: eat warm with salad
Other ingredients can be used in this recipe…. replace the * ingredients with your choice of a combination of left-over vegetables, steamed spinach, red onion, sweet potato, red pepper or feta cheese.
