Baked Saturday 23rd February – perfect for Saturday lunch
1 3/4 cups S R flour
1 tsp baking powder
1 Tbsp chopped black olives (opt)
2 rashes chopped bacon
1 egg lightly beaten
3⁄4 cup milk
pinch of salt
2 tsp garlic salt
1⁄3 cup grated cheese
1 small chopped onion
1⁄2 small chopped green capsicum
1⁄4 cup tomato paste
Pre-heat oven 210C (190C GAS).
Lightly brush muffin tin with oil or melted butter or line muffin tray with muffin cases
Sift flour, salt and baking powder into bowl.
Add sugar, garlic, salt, olives and cheese and stir until they are combined.
Melt butter and cook onion, bacon and capsicum for about 2-3 minutes.
Cool slightly, then add the flour mixture and stir.
Combine egg, tomato paste and milk in small bowl.
Quickly and lightly, fold into flour mixture. DO NO OVERMIX, better if left lumpy.
Spoon into tins and bake for about 8-10 minutes.
Serving suggestion: Serve pizza muffins warm with a green salad
