Thick Blueberry Pancakes

Makes 4 think USA style pancakes

1 cup Flour
1 cup milk
1 egg
1 tsp baking powder
fresh or frozen blueberries, raspberries, strawberries- slightly smashed up. I love blueberries for this recipe

Combine flour, milk, egg and baking powder. Allow to rest for 20 minutes before cooking
Add berries to mixture and stir
heat heavy base pan with a little butter. Add 1/4 of mixture and allow to cook until bubbles appear on the pancake (approx 2-3 mins). Flip and cook the other side.
Repeat with remaining mixture. keep warm in the oven until serving

Tip: serve with fresh yogurt, additional fruit, honey or jam. Enjoy with a fresh brewed pot of tea or coffee.
